Zoodles Galore!


Zucchini noodles, or the more fun term Zoodles, are the newest nutrition craze! And I have to say I am fully on board. Zucchini is the perfect canvas for any flavor palette you are craving that day and with a Spiralizer these noodles are so easy to make, or you can purchase pre-spiralized noodles from grocery stores like Trader Joes and Sprouts. Here are two of my favorite ways to serve up my 'Zoods, but the possibilities are endless.


Turkey Bolognese Zoodles


Ingredients:

1 cup Spiralized Zucchini

1/4 cup Diced Onions

2 tsp Minced Garlic

1 cup Tomato Paste

1/4 cup Diced Tomatoes

1/3 cup Ground Turkey

1 tbsp Olive Oil

Parsley

Oregano

Salt

Pepper

Paprika


Directions:

1. Spiralize your zucchini and toss into a sauce pan with olive oil, salt and pepper. Turn the heat to medium and cover.

2. In a separate pan, place olive oil, onions, and garlic and saute.

3. Saute for 2 minutes, then add ground turkey. Break up ground turkey and cook for about 5 minutes.

4. Put diced tomatoes, tomato paste, and spices in with the ground turkey. Cover and simmer for about 7 minutes.

5. Once zucchini noodles are cooked through, toss them into the pan with your bolognese.

6. Put into a bowl and top with parmesan cheese or crushed red pepper if desired.


Garden Pesto Zoodles


Ingredients:

1 cup Spiralized Zucchini

1 tsp Minced Garlic

1 tbsp Diced Onion

1/2 cup Pesto Sauce

Handful of Sundried Tomatoes

1/4 cup of Pine Nuts

Olive Oil

Balsalmic Glaze


Directions:

1. Place zucchini noodles in sauce pan with olive oil, garlic, and onions.

2. Saute zoodles until cooked through and fragrant with garlic.

3. In separate pan, toast pine nuts until they begin to smell, about 4 minutes.

4. Once zucchini noodles are done, add pesto sauce and sundried tomatoes to pan, stir until fully combined.

5. Place zoodles in a bowl, top with toasted pine nuts and balsalmic glaze.
