No Need for a Bowl with these Stuffed Bell Peppers!


Having as much color on your plate as possible is always the sign of a nutritious meal. This meal is full of color, nutrients, not to mention it's delicious. It also covers most of your food group "bases" with protein, vegetables, fruit, and dairy!


Ingredients:

1/2 of a Bell Pepper

1 tbsp Diced Tomatoes

1 tbsp Corn

1 tbsp Diced Onion

1 tsp Minced Garlic

1/2 cup Ground Turkey

1 tbsp Shredded Pepperjack Cheese

1/3 cup Cauliflower Rice

1 tbsp Olive Oil

Cumin

Paprika

Salt

Pepper

 

Directions:

1. Preheat over to 400 degrees.

2. Slice a bell pepper in half and scoop out the insides, set aside. Then dice all other vegetables, garlic, onions, and tomatoes.

3. Place olive oil in a sauce pan over medium heat. Add garlic and onions.

4. In a separate pan, place cauliflower rice. Add salt and pepper, and turn heat to medium low.

5. Add ground turkey to your garlic and onions and break up with a wooden spoon until cooked through, about 6 minutes. Once meat is cooked add tomatoes and corn.

6. Season meat and veggies to taste with the listed spices (plus any additional you enjoy.)

7. Scoop cauliflower rice into your prepared pepper. Put meat and vegetable mixture on top. Top with cheese.

8. Cover with aluminum foil and place in the preheated oven. Cook for 15 minutes.

9. Remove from oven and top with hot sauce if desired. I served this with a side salad for some extra veggies!
