I'll Take My Cookies in Protein Form


Do you have a few overripe avocados in your pantry? If so you're ready to make these fudgy cookies. Okay you might be thinking "avocado in cookies?!?" but trust me you want be disappointed. The avocado serves as the fat in these cookies so there are no solid fats like butter or margarine. The chocolate in the cookies comes from protein powder, making these cookies fit even as an addition to your breakfast.

Double Chocolate Protein Cookies


Ingredients:

1 Ripe Avocado

1 Egg

1/3 cup Agave Nectar

1 tsp Vanilla Extract

1/2 cup Cocoa Powder

1/2 cup Almond Flour

5 tbsp Chocolate Protein Powder (I like Orgain)

1/3 cup Dark Chocolate Chips

¼ teaspoon salt

1 teaspoon baking powder


Directions:

1. Preheat oven to 350 degrees.

2. Mash avocado and egg in a mixing bowl. Add vanilla and agave and whisk until combined.

3. In a seperate bowl, stir cocoa, almond flour, protein powder, salt, and baking powder. Add the dry ingredients to the wet ingredients and whisk thoroughly. Stir in the chocolate chips.

4. Form 10 cookies into balls. Place about 2 inches apart on parchment lined baking sheet.

5. Bake for 10 minutes. Allow to cool and enjoy!
