Fuel Your Morning with Sweet Potato Hash


Who says that your morning can't start full of veggies? This recipe is packed with healthy nutrients to start your day off right, and the sunny side up egg gives you a protein fueled energy boost.


Sweet Potato Hash and Eggs


Ingredients:

1 Sweet Potato

1/4 of a Bell Pepper

1/4 of a Yellow Onion

1/2 cup of Spinach

1 tbsp Olive Oil

1 tsp Minced Garlic

1/8 cup Pepperjack Cheese, shredded

1 Egg

Salt and Pepper to taste



Directions:

1. Mince garlic and dice onion. Place in saucepan with olive oil, salt, and pepper. Cook until the onions begin to smell, about 2 minutes.

2. Dice sweet potatoes and bell peppers. Toss into saucepan with onions and garlic. Turn heat to medium and cover.

3. Grease a separate pan and preheat on medium heat. Crack egg into pan, sprinkle with salt and pepper, and turn heat down to low.

4. Return to vegetable pan and once potatoes are somewhat soft, add spinach and reduce. Once spinach reduces add cheese and stir until all incorporated.

5. Place hash onto plate, once the white of the egg is firm, place egg on top of hash. Top with hot sauce if you like spice and enjoy!
