These date balls taste like small bits of cookie dough, but are packed with fruit and nuts for a midday pick me up. They're my favorite snack and give you a great burst energy when you hit that 3pm slump, or even if you need a little extra with your breakfast.

Coconut Coated Date Balls
Ingredients:
2 cups cashews (or other nut like walnuts/almonds)
2 cups shredded, unsweetened coconut
2 cups soft Medjool dates, pitted
1 tsp vanilla extract
Directions:
1. Use a large food processor to process nuts and 1 cup of coconut until combined and crumbly.
2. Add dates, vanilla, and salt. Continue processing until you have a sticky batter with all ingredients incorporated.
3. Scoop dough into tablespoons and roll between your hands to form balls. Roll each dough ball in the remaining shredded coconut and place on a parchment paper lined baking sheet. Place in the fridge to set for at least 30 minutes. Store in an airtight container.
